Sooji sheera with banana
Makes: 6 small bowls · Time: about 25 minutes
Ingredients
- ☐ ½ cup fine semolina (sooji or rava)
- ☐ ⅓ cup ghee
- ☐ ½ cup sugar
- ☐ 1½ cups milk, or half milk and half water
- ☐ 1 ripe banana, sliced
- ☐ ¼ tsp cardamom powder
- ☐ a few cashews and raisins
Method
- Heat the milk in a pan and keep it hot.
- Melt the ghee in a heavy kadhai. Fry the cashews and raisins briefly and set them aside.
- Roast the semolina in the ghee on low heat, stirring, for 8 to 10 minutes, until it smells nutty and turns light golden.
- Pour in the hot milk slowly, stirring all the time so no lumps form.
- When the semolina has soaked up the milk, add the sugar and banana and stir until it leaves the sides of the pan.
- Mix in the cardamom and the fried nuts. Place a tulsi leaf on the portion you offer.
Good to know
- Roasting slowly is the secret: rushed sooji tastes raw.
Take care: Hot milk splutters when it meets the roasted semolina. Pour slowly and keep children back.
